SAUVIGNON BLANC 2022

STYLE OF WINE:
Dry White Wine
VINIFICATION:
The grapes were sourced from selected vineyards in the Darling area on the West Coast of RSA. Picked at optimal ripeness to ensure the freshness that Sauvignon is renowned for. Some skin contact and lees rubbing of 4 days was done at 3°C to extract the delicate fruit flavours. The juice was racked and inoculated with yeast and cold fermented in tank until dry.
25 % of the wine was also fermented in older 400 l barrels to add complexity and depth of flavour. The wine was aged on the
lees for 2 months before racking and sulphuring to ensure a silky aftertaste. Another 3 months of lees aging was done prior to bottling.
WINEMAKERS NOTES:
Welcomed by intense blackcurrant leaf and a hint of asparagus
aromas. This is followed by a myriad of tropical flavours,
passion fruit, mango and grape fruit taking the lead. The palate
is alive with zesty green peeper nuisances which flows into a
slight saline and seaweed character. Resulting in a great
example of this site-specific Sauvignon Blanc.
FOOD PAIRING:
Light vegetarian pasta with fresh Allée Bleue Herbs. Scallops
in a fresh citrus jus topped with marinated orange peel.
CHENIN BLANC 2021

93% Chenin Blanc / 7% Viognier
STYLE OF WINE:
Wooded White Wine
VINIFICATION:
Grapes were sources from selected areas vineyards in the Franschoek and Jonkershoek . The grapes were picked at optimal ripeness to ensure rich ripe flavours Chenin is known for. The grapes were sorted, pressed and then settled. The juice was racked and inoculated with yeast and after doing 50% of the ferment in tank it was transferred to Barrel to complete the fermentation.
WINEMAKERS NOTES:
The intense aromas of tropical fruit and well supported by an elegant vanilla and nutty bouquet. The palate is rich and vibrant with layers of sundried fruits, nougat and lemony aftertaste. The rich and ripe flavours are in perfect harmony with the zesty minerality.
MATURATION IN OAK:
15 % NFO and the rest 2nd, 3rd and 4th fill barrels of which all are 400 litre.
FOOD PAIRING:
Serve with Rich Seafood dishes such as seared Tuna with balsamic reduction or Mussels in a creamy white wine sauce.
SHIRAZ ROSÉ 2023

STYLE OF WINE:
Dry Rosé Wine
VINIFICATION:
Handpicked from select vineyards on the Allée Bleue Estate. The grapes were given limited skin contact to extract the vibrant pink colour. The cold fermentation ensured the grapes retain their distinctive fruitiness.
WINEMAKERS NOTES:
Produced predominantly from Shiraz grapes, this wine boasts a vibrant bouquet. Bursts of strawberry aromas give way to a fresh palate of red berries, candyfloss, and a hint of Turkish delight, with a spicy acidity that demands a second glass.
FOOD PAIRING:
Ideal partner for Alfresco-style luncheons. Pairs well with big flavours, such as anchovy, garlic and other spices. Works well with spicy grilled prawns, Paella and Nicoise Salad. Serve chilled.
MCC BRUT 2020

STYLE OF WINE:
Bottled Fermented Sparkling Wine (MCC)
VINIFICATION:
Made in the traditional way, this sparkling wine is blended only using the cuvee (first pressings). A blend of Pinot Noir and Chardonnay is used to emphasize the richness and elegance of this wine. The Chardonnay is partly fermented in older barrels, and underwent malolactic fermentation.
WINEMAKERS NOTES:
A classic blend of Pinot Noir and Chardonnay makes this a true MCC. A bouquet of toasted nuts, brioche, candyfloss and citrus, speak of the passion involved in making a sparkling wine of such class. The palate is rich and complex, with classic flavours of baked bread and marzipan.
MATURATION:
After bottling, the wine spent 36 months on the lees to develop the brioche and complex nutty flavours these wines are known for. Disgorgement took place in March 2020 and the wine developed further richness on the cork. Drink now or in the next 4-7 years.
FOOD PAIRINGS:
A complex MCC that will pair well with poached chicken in a saffron sauce, or when served with any style of seafood.
PINOTAGE 2020

STYLE OF WINE:
Wooded Red Wine
VINIFICATION:
The grapes were sourced from a selected vineyard on our estate and also an old vineyard in Piekenierskloof (planted 1976). We have been farming these special blocks differently for the past 8 years, and this wine is a culmination of those efforts. After harvesting, sorting and cooling, the grapes were crushed and a cold soak done for 4 days at 7 °C. After inoculation with a selected yeast strain, the punch downs started intensely for only 4 days before pressing at 8 ºB. This ensures a supple and smooth Pinotage. The finished wine underwent malolactic fermentation in the barrel and further maturation for 16 months before blending and bottling.
WINEMAKERS NOTES:
Intense brick red colour. Upfront fruit bringing to mind ripe cherries and plums followed by sweet vanilla pods , liquorice and some cedar wood, all reflecting the cultivar. The palate is rich, soft and very elegant. A full flavoured Pinotage that depicts the terroir and cultivar.
WOOD MATURATION:
Of the barrels used, 50% were new and the rest 2nd and 3rd fill. We also use 5 % American Oak in this wine.
FOOD PAIRINGS:
The wine is ideal for Springbok loin Beef Wellington with a berry jus and glazed vegetables.

Bottled Fermented Sparkling Wine (MCC)
VINIFICATION:
Made in the traditional way, this sparkling wine is blended only using the cuvee (first pressings). A blend of Pinot Noir & Pinotage is used to emphasize the fruit of this Brut Rose. After bottling, the wine spent more than 18 months on the lees to develop the delicate brioche flavours that these wines are known for. Disgorgement took place in March 2020 and the wine will develop further richness on the cork. Drink now or within the next 2-3 years.
WINEMAKERS NOTES:
A fresh and lively MCC filled with flavours of strawberries,
rose petals and candyfloss. The palate is clean and refreshing
with great balance and zesty minerality. A great sparkling
wine for those special friends and moments in life.
MATURATION:
Tank fermented and then bottle fermented and aged for more than 18 months.
FOOD PAIRINGS:
Will pair well with Bruschetta topped with fresh salmon and herb cream cheese, Sushi platters with Tempura prawns, Norwegian Salmon Roses and Tuna Nigiri.
sHIRAZ 2020

94% Shiraz / 6% Viognier
STYLE OF WINE:
Wooded Red Wine
VINIFICATION:
The grapes come from a selected vineyard on the farm itself. After harvesting, sorting and cooling the grapes were crushed and placed in the red wine fermenters. The cold soak was done @ 7 °C for 4 days. After inoculation with yeast the pump overs started to extract the colour and flavours. The finished wine underwent MLF in barrel and further maturation for 15 months prior to bottling.
WINEMAKERS NOTES:
Intense deep red colour. Powerful bouquet of violets, cinnamon and chocolate followed by ripe cherries. The palate is smooth and silky, packed with berry fruit and spicy nuances.
MATURATION:
The wine was matured in 5 % American Oak and the rest all French Oak – 55 % of the barrels were new.
FOOD PAIRINGS:
Ostrich kebabs basted with red currant jelly and freshly ground pink peppercorns and finished with a Shiraz reduction. Medallions of Springbok rubbed with cumin and flash roasted – served with spiced beetroot.
